CARROT PIE

For a change try Carrot Pie

Amount		Ingredients
1 Cup		Sugar
1 Tbsp.		Flour
1/2 Tsp.		Salt
2 Tsp.		M-K Pumpkin Pie Spice
3		Large eggs
1 1/2 Cup		Cooked, sieved carrots
1		Cup Light Cream or Evap. Milk
1 Tsp.		M-K Pure Vanilla
Directions Mix together the first four ingredients and beat in eggs. Stir in carrots and milk. Pour into a 9" unbaked pie shell. Bake in pre-heated oven (400 degrees) for 50 minutes or until a knife inserted comes out clean. Let stand until cool before serving.

CINNAMON COFFEE CAKE

This is great cake for the late Winter/early Spring Season - in the morning, Mmm, Mmm, Mmm

Amount	   Ingredients
1 Cup	   Sugar
1 Tbsp.	   Flour
1/2 Tsp.   Salt
2 Tsp.	   M-K Pumpkin Pie Spice
3	   Large eggs
1 1/2 Cup   Cooked, mashed yellow squash
1	   Cup Light Cream or         Evap. Milk
1 Tsp.	   M-K Pure Vanilla
Directions Mix together the first four ingredients and beat in eggs. Stir in squash and milk. Pour into a 9" unbaked pie shell. Bake in pre-heated oven (400 degrees) for 50 minutes or until a knife inserted comes out clean. Let stand until cool before serving.

EVER-READY MUFFINS

Amount		Ingredients
1 Box		15 oz. Raisin Bran
3 Cups		Sugar
5 Cups		All-Purpose Flour
5 Tsp.		Baking Soda
1 Tbsp.		M-K Pumpkin Pie Spice
2 Tsp.		Salt
4		Eggs beaten
1 Cup		Melted Margarine
1 Quart		Buttermilk
2 Tbsp.		M-K Pure Vanilla
Directions Mix bran, sugar, flour, baking soda, salt and M-K Pumpkin Spice in a large bowl. Add eggs, melted margarine, M-K Pure Vanilla and buttermilk. Mix well. Store in covered container in refrigerator and use as desired. For muffins, fill greased muffin pan 2/3 full and bake in pre-heated 400 degree oven for 15 to 20 minutes. This batter will keep in the refrigerator for six weeks.
